Meet Elsy Dinvil, Entrepreneur, Author, Educator

Chef Elsy Dinvil is the founder of Creole Me Up, a Portland, Oregon–based food company dedicated to creating bold, globally inspired flavors with simple, wholesome ingredients. Since launching the company in 2017, her mission has remained the same: to prove that simpler tastes better.

Creole Me Up was born after Elsy spent six years battling severe digestive issues that ultimately led to major colon surgery. That life-changing experience transformed the way she viewed food and inspired her to create products made without unnecessary additives, preservatives, or common allergens. Today, every spice blend, condiment, and recipe is crafted with the belief that clean, thoughtfully sourced ingredients should never compromise flavor.

Originally from Jérémie, Haiti, Elsy draws inspiration from the rich culinary traditions of her homeland while exploring flavors from around the world. Her work celebrates Haitian culture through food, storytelling, and education, introducing people to recipes that are approachable, vibrant, and full of character.

Beyond developing products, Elsy has spent the past eight years teaching cooking classes throughout the Portland area, helping home cooks gain confidence in the kitchen while discovering that extraordinary meals can be created with simple ingredients.

Elsy is also an author. She has published three books—including two e-cookbooks and a semi-novel—and is currently writing her fourth book, Haitian Wisdom: 365 Proverbs Passed Down Through Generations, a celebration of the timeless sayings that have shaped Haitian culture for generations.

Whether through her products, books, or cooking classes, Elsy's mission is simple: to help people reconnect with real food, celebrate culture, and bring joy to every table.
