My name is Elsy and I have been teaching Haitian Culinary Classes for eight years in Portland. I have been teaching Oregonians to use simple and fresh ingredients in their cooking in order to amplify flavors in their dishes. Simpler Tastes Better is my motto. You and I will do exactly that in this class, and we'll have a lot of fun.
We will be making the following:
A. Two types of dough:
In this class, you will master how to knit two types of dough to make delicious Haitian empanadas. We will be making:
1. Pâte brisée (basic dough), and,
2. Pâte feuilletée (puff pastry)
B. Different types of fillings for our empanadas:
You will also learn how to make different types of fillings for the Haitian empanadas:
1. Sausage
2. Chicken
3. Ground beef
4. Vegan with mashed eggplants
C. Condiments:
You will also learn how to make two popular Haitian condiments:
1. Haitian Epis, which is a fresh marinade that Haitians use on everything to add flavors to foods
2. Haitian pikliz, is a spicy tangy relish made with cabbage, onions, carrots, lime juice, salt, and scotch bonnet or habanero pepper to add the heat.
Who can attend this cooking class?
Anyone can attend from 12 years old and up. While we love your beautiful babies and toddlers, they are more of a distraction, and we encourage you not to bring them to our culinary event.

The Haitian Empanada Cooking Class will be held at the Nourish Building located at: 34 NW 1st Ave, Portland, OR 97209.
