During this gathering, we'll cook popular Haitian dishes served in every Haitian household on Sundays or the Holidays. If you get to visit Haiti, you'll eat these dishes sometime during your stay.  We'll cook together, eat the food at the end, and make a lot of new friends. Here is what's in the menu:

  1. Haitian pikliz - the most popular Haitian condiment made of green cabbage, scallion, onions, lime juice, vinegar, salt, and scotch bonnet or habanero pepper.
  2. Rice and beans - this dish is considered to be Haitian's national rice. The rice is cooked with freshly cooked red, pinto, or black beans, a bouquet garni (fresh parsley and thyme tied together), coconut milk, cloves, olive oil, and salt.
  3. Salade Russe - is the famous Haitian potato and beet salad with mayonnaise, peas, carrots, salt, onions, and ground peppercorns.
  4. Chicken thighs in Creole sauce - Chicken marinated in Haitian epis or marinade and baked in a creole sauce.
  5. Gryo or twice-cooked pork - slowly-cooked marinated pork and then deep-fried and served with sauce Ti Malice.
  6. Sauce Ti Malice - is a popular Haitian sauce made with the pork stock, sliced shallots, lime juice, and lots of chopped scotch bonnet or habanero pepper.
  7. Haitian limeade - Freshly-squeezed lime juice, sugar, water, and vanilla, and almond extracts.
