In Haiti, when I was growing up, girls help around the kitchen while boys play soccer. My job in the kitchen since the day I can remember was to crush the ingredients in a mortar and pestle for my mother to make the épis or marinade of the day. There is no need to pound out your spices by hand anymore since I pack all of them for you in the bottle you're holding. Do you want some fresh kick of Créole flavors in your dishes? Add this marinade to any dish!
Ingredients: Onions, green onions, shallots, garlic, olive oil, lime juice, white distilled vinegar, Himalayan salt, black peppercorns, cloves
The Creole marinade with an A-ttitude can be used as a salad dressing, a dressing over your veggie bowl, a dip for your fresh carrots, asparagus, crunchy green beans,, and other veggies for a good hearty snack. You can also sautée your greens and veggies in some too. The marinade can be used to add more flavors to your soups and sauces. Marinate your red meat and poultry overnight and your seafood for an hour or so before you start cooking. Barbecue, slow cook, grill, bake, and sautée on the stove! Enjoy!
